Hazelnut Chocolate Spread
When my husband and I went to Bruges some weeks ago, we ate breakfast at Le Pain Quotidien every day. They had the most delicious rolls, smoothies, sandwiches, coffee and more, all organic. What about Smoked Salmon on a Macadamia Nut Bread Roll or a Sandwich with Grilled Zuchini and Egg Plant on Humus Spread, among many great others? Or the best: Rhubarb and Strawberry Crumble?
I love the hearty bites, but my husband goes for sweets and grabbed for the Hazelnut Spread everyday. Organic Hazelnut Spread. And from the moment I read 'Organic Hazelnut Spread' on that jar I got the idea to make Hazelnut Spread myself, organic or not. So I searched for a recipe and went to the market today to get the hazelnuts.

What you need
200 grams hazelnuts (without skin)
100 grams icing sugar
50 grams cacao powder
2 tablespoons vegetable oil
1 teaspoon vanillia extract
little bit salt
jar to keep the spread in

Grill the hazelnuts for about fifteen minutes in a preheated oven on 190 degrees Celsius, until dark brown. Put the nuts in a food processor and process until you have a smooth paste. Then add sugar, cacao, oil, vanilia and salt. Mix again, until the paste gets glossy. That's all it takes. You can preserve the paste for about a month, in the fridge as well as out.
