Elementary School Christmas Diner

Now and than I take a look at the statistics of my blog and see that most of the readers come from anywhere but The Netherlands, so from now on I will write in English. Sorry in advance for the many mistakes you therefore probably have to read in my blogs, because English is not my mother tongue.

Yesterday my little daughter had her very first X-mas diner at her elementary school and I, the mother of course, had to prepare some snacks for her classmates. I kept it simple and made cheese fingers and empanadas.

For the cheesefingers you only need three ingredients:
  • ·         Puff paste
  • ·         Grated cheese
  • ·         Egg yolk
Cut the puff paste in sticks, cover with egg yolk and sprinkle with the cheese. Put in a pre-heated oven (200°C) until the sticks are golden brown. That’s all. Little effort, great taste!

Ingredients for empanadas:
  • ·         Puff pastry
  • ·         1 chickenbreast
  • ·         50 grammes of chorizo
  • ·         ½ paprika (red pepper)
  • ·         ½ onion
  • ·         clove of garlic
  • ·         salt/pepper
Cut the chickenbreast, chorizo, red pepper, garlic, and onion in little pieces and the chorizo in strips. Bake the chicken until well done and add pepper, onion, chorizo and garlic. Sprinkle salt and pepper as appreciated. Bake until done.
Put some of the mix on a sheet of puff pastry and fold the pastry over to form a triangle. Press the edges with a fork so the mix is closed in.
Bake the empanadas in a pre-heated oven (200°C) until golden brown.
