Grapefruit Upside Down Cake

I love all kinds of cakes, but my most favourite are the ones with fresh fruit in it! This week I made an Upside Down Cake with Grapefruits. Never made an Upside Down Cake before, it was just a try out, but it tasted great, so I share the recipe with you.

What you need:
2 grapefruits
100 grams butter
100 grams sugar
4 sachets vanilla sugar
1 box of cakemix (and the ingredients mentioned on the box, like eggs, milk and such, depending on the mix you use)

What to do:
Preheat the oven (for cakes it's normally 160 degrees Celsius)

Cut the grapefruit in thin slices, enough to cover your cake pan. Cook the slices in boiling water for about three minutes. Take out of the water and dry with paper. Squeeze the juice out of the remaining grapefruit and save in a cup.

Put the butter, sugar and 2 sachets of vanilla sugar in the cakepan and put in the oven until the butter has melted. Take out of the oven, add three table spoons of the grapefruit juice and stir until the sugar has melted, too. 

Arrange the grapefruit slices in the melted butter in your cake pan. 

Prepare the cake batter as told on the cake mix box, but add the other 2 sachets of vanilla sugar and three tablespoons of grapefruit juice. Mix until the batter is smooth.  Carefully divide the batter on top of the grapefruit slices.

Put in the oven and bake for about an hour to seventy minutes.

    1. It's a little paper bag that contains 8 grams of vanilla sugar. Think 8 grams is about one tablespoon.
